A Latte That Loves You Back
Sometimes the most beautiful gifts arrive in the simplest form. A friend recently shared this recipe with me—a Pink Latte made with beet root powder and warming spices—and from the very first sip, I was in love. The color alone is enough to make you smile. Instructions
Add all ingredients to a clean, dry jar. Cover tightly and shake until evenly blended. Store in a sealed jar in a cool, dark place for up to three months. Give the jar a gentle shake before each use—beet powder likes to settle to the bottom.
Hot or Iced Pink Latte
Makes one large latte
Ingredients
- 1½ cups your favorite type of milk (mine is homemade pumpkin seed milk or single-ingredient coconut milk)
- 1 tablespoon Pink Latte Mix
- 1 teaspoon maple syrup or raw honey
Hot Latte Instructions
Warm the milk in a saucepan over medium heat until just below simmering, then whisk briefly to create a little foam. You can also use a handheld frother.
Add one tablespoon of the Pink Latte Mix and one teaspoon of maple syrup or honey to a heatproof mug. Pour in the hot milk, holding back the foam, and whisk until the mix is fully dissolved. Spoon the foam on top, give a gentle stir, and taste. Add more sweetener if you like. Lastly, serve warm and cozy.
Iced Latte Instructions
This is the one extra step that makes all the difference: heat about ⅓ cup of the milk (or use hot water) until nearly simmering. In a heatproof glass, whisk together the hot milk, one tablespoon of the Pink Latte Mix, and one teaspoon of maple syrup until completely smooth. This dissolves the spices so you don't end up with a gritty latte.
Fill a large glass with ice. Pour in the warm pink concentrate, then add the remaining cold coconut milk and stir gently until combined.
