Gluten-Free Vegetable Pasta Salad
Summertime is all about cooking and eating outdoors and this fresh pasta salad fits right into the menu. Starting with grilled peppers and zucchini for a smokey summer taste, the fresh vegetables, herbs and mozzarella and the perfect mix for a light and gluten-free side dish. Yum! I like to keep my dressing as light as the ingredients with a simple olive oil and balsamic vinegar and a finish with salt and pepper. So many options for this salad. I love the smokey taste of the grilled veggies but try to keep them crisp and not overcooked.
