Summertime is all about cooking and eating outdoors and this fresh pasta salad fits right into the menu. Starting with grilled peppers and zucchini for a smokey summer taste, the fresh vegetables, herbs and mozzarella and the perfect mix for a light and gluten-free side dish. Yum! I like to keep my dressing as light as the ingredients with a simple olive oil and balsamic vinegar and a finish with salt and pepper. This salad is so simple to make, you can add or substitute your favorite summer veggies into the fresh mix. Enjoy! ~ Lia

Loved this recipe! I whipped it up for dinner and I threw in some baby bella mushrooms as well. Can’t wait for the leftovers tomorrow. Thanks for sharing! 🙂
Oh that sounds perfect! I am craving making this again too.
This looks so refreshing and delicious. I bet it would be just as good if made with quinoa. Thank you for this recipe!
Yes, I love to make a quinoa salad too! These GF noodles are a quinoa blend which are my favorite of the GF.
My mom and I made something very similar to this earlier this week. I’ll have to try this version now!
So many options for this salad. I love the smokey taste of the grilled veggies but try to keep them crisp and not overcooked.
