Basil & Sweet Potato Mini Frittatas

Ingredients
  1. 1/2 cup white onion, chopped
  2. 1 cup sweet potato, shredded
  3. 12 eggs
  4. 1/2 cup goat cheese
  5. 1/3 cup plain Greek yogurt
  6. 12 small fresh basil leaves
  7. Olive oil
  8. Cooking spray
  9. Salt & pepper to taste
Instructions
  1. Preheat oven to 350 degrees.
  2. Heat 1 Tbsp olive oil in a pan over medium heat.
  3. Add onion and cook 2-3 minutes until soft.
  4. Add shredded sweet potato, salt & pepper to taste.
  5. Cook until soft, 3-4 minutes. Remove from stove and let cool.
  6. In a large mixing bowl, add goat cheese and Greek yogurt, and mix.
  7. Add 12 eggs and whisk gently.
  8. Add onion & sweet potato mixture, as well as salt and pepper.
  9. Spray muffin liners with cooking spray, then pour egg mixture into liners.
  10. Bake for 18-24 minutes, until middle is solid and edges are slightly brown.
  11. Top with fresh basil leaf, and let cool.
