I will be perfectly honest. . . now that I have tried several recipes from America’s Test Kitchen’s The How Can it Be Gluten Free Cookbook, there is no going back. For every recipe they write about how they came to the final recipe, testing and remixing until they get each and every recipe to a place of perfection. Today I tested this chocolate cookie recipe and found myself delighted by the texture and flavor of this gluten-free cookie. I am now imagining making them into ice cream sandwiches for summer events. Divine! Here are the steps I took to make these cookies with my slightly modified recipe below. As I have mentioned before, I do recommend that if you are baking gluten-free, this cookbook is a must, especially for their very cost effective and near perfect gluten-free flour blend. Enjoy! ~ Lia

I plan to try these for a friend that is gluten free. I have a bag of Bob’s Red Mill GF flour. Ok to use in this recipe. I noticed you said not to use it in the chocolate chip recipe.

Bob’s came out with a new GF flour that is NOT garbanzo bean-based. That one should work fine.
I am making these right now and I don’t see when to add the Xanthum gum. Is it with the dry ingredients?
I fixed the recipe. . . yes, it goes in with the dry. đŸ˜‰
I just discovered your blog while looking for ideas for a birthday party I am hosting. I am going to make these for a guest who is gluten intolerant. They look yummy! I am a long standing fan of ATK and have had much success with their recipes.

Firstly. Those cookies look divine. Saw you follow up on IG. Secondly, I am squealing over here because I didn’t know Americas tests kitchens has a gluten free cookbook! My husband and kids gave me the the big cookbook with all their recipes from every season in it for mom’s day. My bday is coming up. Think I will ask for the gluten free cookbook.
Oh it is REALLY good too! I love how for every recipe they talk about how they make the recipe work and why they used the combo. It is the chemistry of baking (GF baking to add it the complexity) which I just dig. đŸ˜‰
