Oh my dear chocolate. . . how do I love thee. Especially in the form of a warm and gooey double chocolate cookie! I will be perfectly honest. . . now that I have tried several recipes from America’s Test Kitchen’s The How Can it Be Gluten Free Cookbook, there is no going back. For every recipe they write about how they came to the final recipe, testing and remixing until they get each and every recipe to a place of perfection. Today I tested this chocolate cookie recipe and found myself delighted by the texture and flavor of this gluten-free cookie. I am now imagining making them into ice cream sandwiches for summer events. Divine! Here are the steps I took to make these cookies with my slightly modified recipe below. As I have mentioned before, I do recommend that if you are baking gluten-free, this cookbook is a must, especially for their very cost effective and near perfect gluten-free flour blend. Enjoy! ~ Lia
