Happy Friday! I have some exciting news that I can now share. I am heading to San Francisco a week from Monday to film five video tutorials with Creativebug. As you can guess, I am busy, busy prepping all of the projects to get things shipped on Monday for shooting the following week. No rest for me this weekend! If you are on Instagram you can follow my behind the scenes of the video shoots. I will give you some extra sneak peeks. I promise to give you full details later.

Because of the whirl in my studio, today’s recipe is just a tad rushed. I thought about skipping Food Lover Friday today, but it is my other half’s birthday and his favorite treat is homemade shortbread, so of course I am sharing it with you today. Though he is not gluten-free like me, he jumps right in to eat the recipes I post and is my best taste tester. I wish I had more time to make prettier chocolate lines on the cookies and more daylight to shoot to perfection but instead I am showing some real life gooey chocolate swirls on these very tasty gluten-free short bread cookies.

I have tried several version of gluten-free shortbread and the results were not so good. This version is an amazing melt-in-your-mouth cookie. With the added chocolate swirl it is divine! ~ Lia

Perfect timing…planning a baby shower for my Niece and looking for GF recipes to use with cookie cutters. Eager to give the recipe a try! Thank you!

  I made some inside the cutters as I show and a few without the metal around them as they baked. Those worked too, but did spread a bit. Still tasty.
