Your New Favorite, Easy Chocolate Treat
What started as a DIY recipe trade-off between Anna and me quickly became our collective new favorite chocolate. And now it can be your new favorite treat, too! The team and I are always looking for the best little afternoon pick-me-up treats that can satisfy both our sweet tooth and dietary needs. These simple, five-ingredient chocolates have become a famous afternoon treat for our office. Want to know the best thing about these chocolates? They are so decadent and indulgent. They may taste like a guilty pleasure, but they're actually pretty healthy!

No recipe would be complete without a little story, right?
I often joke that Anna is the energetic heart of the office. When she's gone, the space is a little less full of pep and a lot more quiet. She's always sharing the most decadent Swedish treats with us, expressing genuine interest in our lives and personal JOYs, or dazzling us with her latest fashion choices or stories of metropolitan life... (Fun Fact: She was a fashion merchandising major in NYC!) and, she's the inspiration behind these chocolate treats.
Anna and I met while working at Moonstruck Chocolate in Portland, Oregon long before Lia Griffith became a brand. Anna worked in product development and marketing, and I worked in the graphic department designing the chocolate packaging and photo styling!
It's where we learned how well we create beautiful things together.
You could say we were moonstruck while working there because that job launched a creative partnership that has spanned decades and continents! Now, onto the recipe! 😋
Honey Yums!
Here's what you'll need:
- 1/2 cup of raw, unsalted nuts (My favorite is raw cashews, but you can use almonds, peanuts, or pecans)
- 1 Tbsp. coconut oil
- 1/2 cup cacao powder
- 3 Tbsp raw local honey
- 1/4 tsp sea salt
Instructions:
- Pulse the nuts in a food processor until they're finely chopped. (Note that you can use nut butter but must adjust the coconut oil to avoid being too oily).
- Add the coconut oil, cacao powder, honey, and salt.
- Blend until the mixture is well combined and has a dough-like consistency.
- Roll the dough into a ball, then flatten it into a disk on your parchment paper.
- Cover with parchment paper and roll until it is about a quarter to half inch thick.
- Place in refrigerator to harden and store between snacking.
That's it! See? Super easy. And the best part? You can customize these to your liking or dietary needs.
Add shredded coconut, chopped nuts, cinnamon, or sprinkle the top with sea salt for a delightfully savory taste.
These Honey Yums are perfect for satisfying your sweet tooth. They're packed with healthy fats, protein, and antioxidants and naturally sweetened with honey. Plus, they're super convenient to make ahead of time and keep in the refrigerator whenever you need a little chocolate fix!
TIP: Put a batch in the freezer to make them a bit more caramelized and chewy for a fun, lip-smacking candy version!

I tried these with the simplest ingredients I had on hand (peanut butter and dark cocoa powder instead of fancier nuts or cacao) and they were delicious! I will try them again with the other suggestions because they are so easy!
