This Luau party cocktail recipe is the perfect summer cocktail for those who like a little tropical taste to their beverage. Packed with pineapple, lime juice and a dose of white rum, just a sip of this yummy drink makes you feel like you are miles away, on a white sandy beach with the ocean lapping at your toes. Well….. almost! From our kitchen in Portland, Oregon we have been creating a Luau Party this week and developing this cocktail recipe definitely had us feeling that vacation vibe. We combined fresh pineapple and lime juice in a cocktail shaker and muddled them together to release all that lovely pineapple juice. Add a shot of white rum, then fill the shaker with ice. Give it a good old shake, and pour into glass filled with ice. Top with rosé bubbly and you have yourself the perfect light and refreshing Luau party cocktail.
