Bake with Love
Oh, how I love a classic, buttery scone! The kind that's rich and decadent. Lately, however, as I've focused on nurturing my well-being, I've realized the importance of finding alternatives that still bring joy without compromising my health goals. I know I'm not alone in this. So many of us are navigating dietary sensitivities or simply making conscious choices about what we nourish ourselves with, and this Paleo Blueberry Scone Recipe fits perfectly.
That's where these paleo blueberry scones come in. They're a little slice of heaven that ticks all the boxes for me. Made with paleo-friendly flour and sweetened naturally with monkfruit, they're free from refined sugars and gluten. While they don't have the same richness as a traditional scone loaded with butter, the coconut oil provides a lovely tenderness, and the burst of juicy blueberries makes every bite a delight.
What Goes Into These Guilt-Free Goodies:
- 2 cups Bob's Redmill Paleo baking flour (a wonderful blend of nut and seed flours)
- 1/4 cup Monkfruit sugar (my go-to for natural sweetness)
- 1/2 teaspoon baking powder (for that essential lift)
- 1/4 teaspoon sea salt (to enhance the flavors)
- 1/4 cup solid coconut oil (for moisture and a touch of richness)
- 1 egg (to bind everything together)
- 1/4 cup milk (I use coconut milk, but any dairy-free milk works beautifully)
- 1 cup fresh or frozen wild blueberries (the stars of the show!)
My Simple Steps to Scone Bliss: Follow the steps of this Paleo Blueberry Scone Recipe with care and enjoy the delightful results.
- I preheat my oven to a 375°F (190°C).
- In a bowl, I gently whisk together the paleo flour, monkfruit sugar, baking powder, and sea salt.
- Using a pastry blender (or a fork), I cut in the cold coconut oil until the mixture looks like coarse crumbs. This step is crucial for that lovely texture.
- Then, I carefully add the egg and almond milk, stirring just until everything is combined. I'm always mindful not to overmix.
- Finally, I fold in those beautiful, plump blueberries.
- I gently place the loose dough onto a baking sheet and form it into two rounds, about two inches thick. Then, I slice each round into those familiar triangle shapes.
- A light brush of almond milk and a sprinkle of extra monkfruit sugar on top adds a little extra touch.
- Into the warm oven they go for about 25 minutes, until they're beautifully golden brown and smell absolutely divine.
- The hardest part? Waiting for them to cool just a bit before I can take that first delicious bite!
