Quinoa is one of our favorite sources of protein, and because most of us in the studio are gluten-free, it’s also a great alternative to wheat. Quinoa goes well with almost everything, and it is so easy to take it up a notch by adding some simple but delicious ingredients. Here is our recipe for a quick Mediterranean quinoa salad, which we paired with our turkey zucchini meatballs. Feel free to mix in any other ingredients that you love, or leave anything out that you don’t! - 2 cups Quinoa, uncooked
- 2 Tbsp Olive Oil
- 2 Tbsp Fresh Lemon Juice
- 1/2 cup Finely Chopped Mint
- 1/2 cup Finely Chopped Cilantro
- 4 Tbsp Lightly Toasted Pine Nuts
- 3 Tbsp Pomegranate Seeds
- Cook quinoa according to package, allow to cool slightly, then mix in all other ingredients.
